Yummy Honey Bun Cake


It is so light and moist and ever so good.

1 box Yellow Cake Mix

Mix according to box directions

Mix 3 tbsp. cinnamon & 3/4  cup packed brown sugar mix together

Drizzle 4 tbsp. honey over cake and sprinkle on the sugar and cinnamon, take a knife and run all through the cake in circles to distribute the cinnamon and honey through the cake.

Bake in preheated oven at 350 for about 30 to 40 min. until done

Grandma’s Chicken & Cornbread Dressing

Mary's Country Kitchen


I baked Hen (chicken)

6 cups cornbread ; crumbled

2 cups, biscuits, crumbled

1 cup chopped celery

1 lg. med onion chopped

2 eggs,boiled and chopped

Sage to taste I use 2 to 3 tbsp. (we like sage. I also use fresh sage chopped)

Add chopped onion and chopped celery into a saucepan with chicken broth, cover to 1 inch above.

When they  are just tender add all to the bread mix, add salt and pepper to taste

Add in chopped boiled eggs and mix well. (Fun Part !! ) taste to see if need more  seasoning.

Now it is ready to bake. Since everything is already cooked. you will just bake 350 until browned

NOTE:   If you are not sure if you like sage go slow about adding. Do the taste test. I always let the family get a spoon and taste for me. You will know by their  reactions if…

Happy Thanksgiving

IMG_2057  Wishing you all a very Happy Thanksgiving. It is a time for family to come together and share a traditional meal.

      Mothers and Grandmothers will be preparing  all the traditional and non traditional meals. All the turkey and dressing and pumpkin pies aroma feels the air with all the goodness and love that comes pouring out of the kitchen. I remember as a kid  all the family was looking so forward to going to grandmothers house, you knew that there would be that famous chocolate pie waiting just for you, not to mention the deviled eggs, dressing ,that was my job to test it before it went into the oven to bake. My fondest memories were walking around with my grandmother watching and asking questions as she prepared dinner. Love the holidays fro that very reason. Some of us don’t have our mothers, and grandmothers around here anymore, but this is the time I carry on their tradition and remember  all the sweet memories. I feel like they are right there beside me feeling proud.  Please share a meal with your family and embrace every sweet moment, life is so short. If you and your family are at odds. forget  all that ,time to make amends both sides forgive and forget, When one is gone, the other will be wishing you had the time to go back, but we can’t rewind. Embrace your family. Remember someone that don’t have a family take them a plate of food or invite them to eat with you. remember the homeless they to need meals. When you are sitting around the table with your family give thanks for each one.  When you all gather around the table  this Thanksgiving share one memory or one thing you are thankful for. just my thoughts for the day. Spiced Pumpkin Bars


Preheat oven to 350 degrees.


2 cups all purpose flour

1 1/2 cups sugar

4 beaten eggs

1 cup veg. oil

2 tsp. baking Powder

1/4 tsp. salt

1 tsp. baking soda

1 1/2 tsp. cinnamon

1/4 tsp. cloves

1/4 tsp. allspice

1 can (15 oz.) pumpkin

Mix into large bowl, sifted flour, salt, baking soda, and baking powder.

Mix in all  the spices and whisk all together.  Add eggs, oil, and pumpkin. mix well together.

Pour into lightly greased 15x 10×1 inch baking pan.

Bake in 350 oven for 30 to 40 min. or until toothpick inserted in middle comes out clean.

Cream Cheese Icing

1 8 oz. cream cheese, softened

1 stick butter, softened

1/4 cup milk

2 pounds powdered sugar.

Add nuts if desired and also can add pumpkin pie spice.

Pecan Pie Cake

This is my version of pecan pie cake. Saw this the other day and thought it interesting , so this is what I come up with.


Yellow Cake


Preheat oven to 350 grease and flour 2 9 inch cake pans.

2 1/4 cups all purpose flour

1 1/2 cups sugar

1 tsp. salt

3 tbsp.  fresh baking powder

1 1/2  sticks butter softened

1 cup milk

3 eggs

1 tsp. pure vanilla

 Mix flour, sugar salt and baking powder whish together in mixing bowl ( it helps to incorporate air into the flour for lighter cake)  Add butter and milk beat 1 min. on med speed, add eggs and vanilla beat 1 minute med speed, Pour into 2  9 inch pans that have been greased and floured.

Bake at 350 for around 30 minutes or until tooth pick inserted in middle comes out clean

Pecan Pie

1 stick butter

4 eggs

1 cup sugar

1 tbsp. flour

1 cup white corn syrup

1 tsp vanilla

1/2 tsp. meal

1 cup pecans

Beat egg  with whisk slightly, add sugar, flour , meal and  add syrup, vanilla. stir well and pour into a grease and floured cake pan that  has pie crust cut for just the bottom of pan. pour filling over and bake 350 until done. it is done when middle of pie is set.  about 40 min. Cool run  a knife around the pan edge  to loosen from sides. let cake and pie get cold before trying to put together.

Ganache Icing

3/4 cup milk or heavy cream

8 oz. chopped semi et chocolate  chopped

Pour boiling milk over chopped chocolate and stir until creamy and ice between layers and rest for top.

add chopped nuts on top for garnish.

Delightfully Yummy Chocolate Cake


This is my mom’s recipe, the only chocolate cake I remember growing up. It is so moist and soft.Covered in with chocolate

 For best results, I always  lay wax paper on counter, set cake pan on top and with a pencil run it around the bottom of pan (on the wax paper and cut out. You can use that as a pattern to cut as many as you need. Place one in each pan, spray ( I like the one that has the flour in the mix.)  you will need 3  9 inch cake pans. Preheat oven to 350.


2 cups sugar

2 cups self rising flour

4 tbsp. cocoa 

3/4 stick butter, unsalted

1/2 cup water

3/4 cup oil

3 eggs

1 cup buttermilk

1 tsp. soda

2 tsp. pure vanilla

Mix flour ,sugar, together and water, butter mix well

add eggs, mix well, add soda to buttermilk and add to mix an mix well.

Bake in 350 oven for about 30 min or until toothpick inserted in middle of cake comes out clean.

take out when done cool 10 minutes. Run knife around outside of cake to loosen from sides.

I   Chocolate  Icing For Cake

This was my mom’s favorite icing to make for chocolate cake or yummy yellow cake with this icing my favorite.


2 cups sugar

1/2 cup cocoa

1 stick butter

1/2 cup milk

Add all ingredients in saucepan and let come to a boil slowly cover pan while waiting for the boil.

(this way the sugar will dissolve better)

Take of lid and boil for 1 min. Take off let rest for about 10 min. and then add vanilla, and beat until it is right consistency to spread on cake. This is the icing that you may remember it getting hard on the cake like fudge. So yummy, Hope you family
