Red Velvet Cake


1 1/4 cups sugar

1 cup soft shortening

2 eggs

1 tsp vanilla

2 1/4 cups all purpose flour

1 Tbsp. cocoa

1 tsp. salt

1 tsp. baking soda

1 tbsp. vinegar

Combine sugar & shortening, blend well, add eggs and vanilla.

Sift together flour, cocoa salt add dry ingredients   alternately with buttermilk

Add the red coloring,  blend in with batter. This makes 3 layers. Grease and flour pans.

Bake in preheated oven at 350 degrees.

Cream Cheese Frosting

1  8 oz. cream cheese

1 stick butter softened

2 to 2 1/2 cups powdered sugar, add more if needed

1 tsp. vanilla

Beat all in mixer until smooth. spread on cake. add nut ti icing if you like
