Mary’s Thursday Tips

This is a few substitutions to  help out with your holiday baking.

 I know many times I would be out of one thing or another and having good tips on hand. can make for a better day.

hope you will find them useful.


1 whole egg= 2 egg yolks.

1 cup brown sugar  = 1 cup white sugar and 1/4 cop molasses

1 cup light cream =7/8 cup milk + 3 tbsp. margarine

1 cup heavy cream = 3/4 cup milk plus 1/3 cup mm margarine

1 cup butter = 1 cup margarine + 1/2 tsp. salt or 1 cup of shortening + 1/2 tsp salt  

1 tsp. baking powder = 1/4 tsp. baking soda + 5/8 tsp. cream of tartar or 1/4 tsp.baking soda + 1/2 cup buttermilk to replace 1/2 cup of liquid in recipe.

1 tbsp. corn starch = 2 tbsp. flour

1 cup self rising flour = 1 cup all purpose flour, 1 tsp. soda, 1 tsp baking powder and 1/4 tsp. salt. 

1 cup cake flour= 1 cup minus 2 tbsp. all purpose flour

1 cup corn syrup = 1 cup sugar+ 1/4 cup liquid.

1 cake yeast same as 1 package

of yeast
