I can’t remember a Christmas that a coconut cake wasn’t there
for dessert and boiled custard to go with. So good always looked forward to dessert. You know I think that is our best memories of childhood is the desserts, cookies and homemade fudge, all the yummy stuff Merry Christmas Everyone.
2 1/2 cups sifted all purpose flour
1 1/2 cups sugar
1 tsp. salt
3 tsp. baking powder
2/3 cups soft shortened
1 cup milk
2 tsp. vanilla
Combine together the flour, sugar, salt, & baking powder in mixing bowl Add shortening, milk, beat well,
Add eggs and vanilla and beat well for 2 minutes Pour into 2 9 in. cake pans that has been greased and floured
Bake in 350 oven for 30 to 40 minutes or until toothpick inserted into middle comes out clean..
7 Minute Frosting
Basic 7 min. icing
2 unbeaten egg whites
11/2 cups sugar
1/4 cup white syrup
1/4 tsp. salt
add all ingredients into double boiler and beat until it holds a soft peak. about 7 min. sometimes a few more min. depending on temp.
