Homemade With Mess

This cake so incredible close to perfection but it has one overwhelming flaw, and that is that it doesn’t last forever. Infact, in our household of just two people it was gone within 24 hours, which I believe must be some sort of a World Record! Because it went down so well I made it again a few days later, so I have one word of advice….  DO NOT make this cake if you’re on a diet, as you won’t be able to help yourself just having the one extra slither (again and again and again)

  • 2 very ripe medium or 3 mini banana – mashed
  • 140g stork (or soft butter)
  • 140g caster sugar
  • 2 eggs
  • 140g self-raising flour
  • 1 tsp baking powder
  • 100g toffee – chopped into tiny pieces
  • Handful pecans – roughly chopped

For the Icing

  • 55g butter
  • 110g brown sugar
  • Pinch salt
  • 3 tbsp milk
