Mom’s Candied Sweet Pototoes

Antioxidants abound in sweet potatoes, which also have anti-inflammatory properties. The beta-carotene and vitamin C in these tubers work together to rid the body of cancer-friendly free radicals. Free radicals are necessary for some biological functions, including vascular tone control. However, free radicals can also cause damage in reactions with DNA, and antioxidants work to lessen and then repair damage caused by these free radical exchanges. Vitamins A and C are also anti-inflammatory, making sweet potatoes an excellent food for those suffering from either form of arthritis or asthma.

My mom used to make this for every Sunday supper, always looked forward to that time. Back in those days parents didn’t have to worry about children eating their vegetables. We were introduced to it at such an early age, that it was a normal thing to eat   I know it was that way for us, we preferred vegetables over dessert. Good old days and wonderful memories. 


3 med. size sweet potatoes

1/4 cup granulated sugar

1/4 cup brown sugar

1/2. stick  butter to slice over the top

1/2 tsp. salt

1/2 tsp.. nutmeg

Bake in 350 oven for 30 to 40 minutes or until tender.

this is also really good to add about a  handful of frozen pineapple chunks. And orange zest also gives a delicious aroma when baking.    Thanks for stopping by, always welcome in Mary’s Country Kitchen
