Mom’s Old Fashion Jam Cake / Caramel Icing

3 Cups plain flour
1 1/2 C. sugar
1 cup buttermilk
1 cup blackberry jam
2 ts. soda, 2 tsp cininmon
2 tsp. allspice
1 cup pear preserves
1 cup crushed pineapple ( opional)
1 cup butter
1 cup nuts
5 eggs seperated

Beat egg whites with mixer stiff peaks

Mix all dry ingredients set aside. mix wet ingredients, except jam mix all together, stir in jams and nuts. Fold in egg whites. Do not over mix. bake 350 25 to 30 min. depending on how hot you oven gets. This is my moms recipe, many years old. You can add or omit any of the spices. i use seedless blackberry jam and pear or peach preserves, add more moisture.

Creamy Delicious Caramel Icing

3 cups sugar

3/4 cups milk

1/2 stick butter

3 tbsp. flour

1/2 cup sugar to caramelize

Add together the sugar and flour in fairly large pan.

Add milk and bring to a boil on med heat in small skillet add the 1/4 cup sugar

and brown when all is melted and turn a amber color add slowly to boiling mixture and cook to soft ball stage remove icing from the heat  and add butter and beat until it is creamy and ready to spread.

Mary’s Tips for Friday

Who knew boil a lemon for a few minutes to get more juice. You know how you squeeze a lemon and know there is more ,but just won ‘t  come on out of there. Try this.

if you will place an onion in the freezer for a while ,they will be easier to grate or slice.

Place a small cup of vinegar on the stove top near cabbage or fish when cooking. It will absorb the odors
