There is nothing quite as delicious as a peanut butter sugar cookie, especially alongside a steaming cup of coffee or tea! This recipe makes around 30 soft cookies, packed full of moreish peanut flavour with a crispy sugar coating. The dough is quite sticky when first made so make sure to chill it for at least 3 hours (I made mine the night before which worked well!), this ensures a firm dough that is easy to roll into balls. I really like the homemade touch of rolling them into sugar and using a fork to create a criss-cross pattern 🙂 You could also finish these off by adding a sprinkle of chopped peanuts to the top of each cookie or dipping half in melted chocolate. What Southern girl does not love cream cheese and pecans?

This recipe was shared with me by my Mother-In-Law several years ago and I fell in love!

Several of my friends have asked me for the recipe, so I thought I would share!

I hope you give it a try and enjoy it.

Quick Italian Cream Cake

Ingredients

  • 1 (16.25-ounce) package white cake mix (I used Duncan Hines Moist Deluxe)
  • 3 large eggs
  • 1 1/4 cups buttermilk
  • 1/4 cup vegetable oil
  • 1 (3 1/2-ounce) can flaked coconut
  • 2/3 cup chopped pecans, toasted
  • 3 T Rum (optional)
  • Cream Cheese Frosting (below)

Preparation

  1. Beat first 4 ingredients at medium speed with an electric mixer 2 minutes. Stir in coconut and pecans. Pour into 3 greased and floured 9-inch round cakepans.

Oats were first cultivated in 1,000 BC in central Europe. Ancient Greeks and Romans scoffed at oats as “barbarian” food and only fed it to their animals. It was oat eating Germanic Tribes that later defeated the Romans, resulting in the fall of the Western Roman Empire.

Oats were first brought to America in the early 1600’s by European explorers, such as Captain Bartholomew Gosnold, who planted them off the coast of Massachusetts. Scottish and Dutch immigrants first used them in traditional porridges, puddings, and baked goods. Currently, Vermont has the highest per capita oatmeal consumption in the United States, where it is often consumed with another local favorite, maple syrup.

How to Make Oatmeal

  • Make oatmeal with milk instead of water to increase the protein and calcium.
  • Ramp up the healthfulness by stirring in some yogurt with live active cultures and reap the health benefits of probioitcs.
  • Add fresh fruit such as blueberries, strawberries, bananas, or apples to increase the fiber, vitamins and minerals, as well as add anti-oxidant rich phytochemicals. No fresh fruit? Add dried fruit such as raisins or cranberries.
  • Add nuts such as walnuts, pecans, olive oil, and sunflower seeds to add heart healthy mono or poly-unsaturated fatty acids and protein. The added fat will also help you stay full even longer.
  • For added sweetness without the calories, consider adding stevia or another low calorie sugar substitute.

I recently got this recipe off the Rachel Ray Show, with Kelsey Nixon (Food Network)

I have tried and it is a very good cookies and is soft and kind of like a cake cookie. Family approved.

Ingredients for Cookies

1 cup all purpose flour

1 tsp. baking powder

1 tsp. baking soda

1 tsp. salt

1 cup quick oats

2 mashed bananas

1/2 cup applesauce

1/2 cup peanut butter

1/2 cup brown sugar

2 tsp vanilla

1 cup chocolate chips

1 cup coconut

1/2 cup cups.

In large mixing bowl add flour.baking soda,salt and baking powder Whisk all together. Add oats, coconut,and nuts. In a separate bowl add all the wet ingredients and add to the dry. stir until  fully combined. stir in the chocolate chips. Drop by teaspoonful’s. onto  lightly greased baking sheet. Bake 20 to 25   in a preheated oven at 350 degrees.

Burnt Pot Solutions

Ok y’all it happens to the best of us. I burn my bean pot today. now here is how I fixed it.
1- pour red cider vinegar to cover the bottom, let sit for 30 to 45 min.
2- pour in 3 tablespoons baking soda and you will see the black begin to come up. let sit about 20 min. or so. use stainless srubber to get the rest off. I t don’t take a lot scrubbing
3- This is the outcome on the end. Just wanted to show how it works. It totally works  It is not something I am proud to show off ,Lol I do have a good reputation to uphold. But can be some very useful info.. This is my pan and I cleaned it. this method really works.

“Pets offer an unconditional love that can be very helpful to people with depression,” says Ian Cook, MD, a psychiatrist and director of the Depression Research and Clinic Program at UCLA.

Studies show that animals can reduce tension and improve mood. Along with treatment, pets can help some people with mild to moderate depression feel better. If you’re depressed, here’s a rundown of how pets could help.

Uncomplicated love. Are your relationships with family and loved ones complicated and frayed? A pet can be a great antidote. “With a pet, you can just feel,” says Teri Wright, PhD, a psychologist in private practice in Santa Ana, Calif. “You don’t have to worry about hurting your pet’s feelings or getting advice you don’t want.”
Responsibility. You might not think you can take care of a pet right now. Taking care of yourself may seem hard enough. But experts say that adding a little responsibility can help. It adds a new and positive focus to your life. “Taking care of a pet can help give you a sense of your own value and importance,” Cook says. It will remind you that you are capable — that you can do more than you might think.
Activity. Are you barely getting off the couch these days? You need to get more physical activity. Pets can help. “If you have a dog, that dog needs to be walked,” Cook says. A little extra physical activity is good for your physical and mental health.
Routine. Having a daily schedule helps people with depression. An animal’s natural routine — waking you in the morning, demanding food or walks — can help you stay on track.
Companionship. Depression can isolate you. It can make you pull back from your friends and loved ones. If you have a pet, you’re never alone. That can really make a difference.
Social interaction. Having a pet can gently push you to get more social contact. You might chat with others while walking your dog at the park or waiting at the vet. Pets are natural icebreakers, and other pet owners love to talk about their animals.
Touch. Studies show that people feel better when they have physical contact with others. Pets offer something similar. There’s something naturally soothing about petting a cat on your lap. Studies have shown that petting a dog can lower your heart rate, too.
Better health. Research has found that owning a dog can lower blood pressure, reduce stress hormones, and boost levels of feel-good chemicals in the brain. One study of Chinese women found that dog owners exercised more often, slept better, reported better fitness levels and fewer sick days, and saw their doctors less often than people without dogs.h
